Main Dishes

There are many different versions of this wonderfully tasty dish. I will put several different ones here. We do not use dairy products unless we can use a substitute.

5 large baking potatoes shredded
1 large vidalia onion diced
olive oil
salt/pepper/garlic powder
flax seed meal (1 tbsp + 3 tbsp water = 1 egg) make enough for 2 eggs. Let stand 3 min.
1/2 C of oat flour or potato flour

Soups : Sweet Potato Soup

Ingredients:

2 pounds sweet potatoes (cut into cubes)
1/2 cup water
1 cup chopped onion
2 tablespoons olive oil
3 tablespoons shopped cilantro (optional)
1/2 teaspoon ground cumin (optional)
2 cloves of garlic minced or shopped
4 cups unsalted vegetable stock
1/4 teaspoon sea salt
1/4 teaspoon grounded black pepper (optional)
1/2 cup of almond milk

Breakfast : Easy Pancakes (Alkaline)

(makes 6 - 8 pancakes)

1 cup oat flour
1/2 cup potato flour or potato flakes
3 1/2 teaspoons baking soda
1 teaspoon salt
1 1/4 cups almond or soy milk
1 Flax “egg” (egg substitute) - 1 tablespoon ground flax seed (flaxmeal) and 3 tablespoons of warm water. Equivalent of a single egg.
